Baked Brown Rice Casserole

Cook the onions in coconut oil until soft and add the garlic.

Add the mushrooms to the skillet and cook just until the mushrooms begin to soften.

Mix together the veggie broth, soy sauce, and red miso.

Place the brown rice in a square baking dish and top with the mushroom mixture.

Add the vegetable broth with miso to the rice and veggies. Stir to combine.

Bake covered in the oven for 60-70 minutes or until rice is tender.
