Coat the outside of the sweet potatoes with olive oil and bake in the oven until tender.

Cook the onions in olive oil until tender and then add the garlic and cook for 60 seconds.

Add the spinach and cook until wilted.

Add the quinoa and heat.

Add the white wine, soy sauce, and cheese. Taste and season.

Split open potatoes and fluff up the sweet potato.

Top with the quinoa mixture.

Top with walnuts and serve!
