Make the simple vegan pesto with the olive oil, fresh basil, walnuts and garlic.

Toss the veggies in olive oil.

Spread out on a sheet pan and bake in the oven for 20 minutes.

Cut tofu into cubes and toss with the pesto.

Add the tofu to one end of the pan with the veggies and bake for another 20 minutes.
