Soak your chickpeas for 24 hours before making falafel burgers!

Make the cucumber salad.  Mix diced tomatoes, cucumber and onions with chopped cilantro and lemon juice.

Make the tahini sauce. Blend the tahini, garlic, lemon juice, olive oil and parsley together. Add water to thin out so it will drizzle easily.

Make the falafel mixture. Place all the ingredients for the falafel burger patties into a food processor.  Pulse in short bursts to blend up mixture. Be patient this may take some time.

After about five minutes, the mixture is about halfway there.  Let your processor rest if it is getting too hot. We still have a ways to go!

The mixture is ready when it is mostly smooth and will shape into patty.

Use a half cup to measure out the falafel burger mixture to form the patties.

Use your hands to flatten out the patties evenly and smooth out the edges.  Repeat with remaining mixture.

Cook patties in hot oil until browned, turn over gently using a spatula and fork and cook on the other side.

Serve up patties on falafel or a bun with the tomato cucumber salad and tahini sauce.
