Saute the bell pepper, onion, and tomatoes in the IP with the coconut oil until tender.

Add the garlic and cook for one more minute.

Add the black eyed peas, bay leaf, and veggie broth. Cook on high pressure for 18 minutes.

Use natural release for 15 minutes and then open. Add cajun seasoning, coconut aminos, vinegar, and liquid smoke.

Stir in the greens and cook for ten minutes on the saute setting to wilt the greens.

Give it a taste, add salt and pepper, and adjust the flavors.
