Boil the potatoes and carrots until tender.

Blend the cooked potatoes and carrots with the spices, nutritional yeast, miso, vinegar, salt, and pepper. Blend until smooth.

Combine the cheesy sauce with the herbs, quinoa, and broccoli and mix together. 

Combine the panko with parsley, nutritional yeast, and seasoning.

Transfer the quinoa mixture to a baking dish and top with breadcrumb mixture. Bake until bubbly.
