WHAT YOU NEED TO MAKE FALAFEL BURGERS

Falafel burgers are made with dry, uncooked chickpeas.  They will need to soak in water for 24 hours before making the burgers.

Step 1

Make the cucumber salad: Dice up tomatoes, cucumber and onions into small pieces.  Mix with chopped cilantro and lemon juice.

Step 2

Make the tahini sauce: blend the tahini, garlic, lemon juice, olive oil and parsley together. Add water to thin out so it will drizzle easily.

Step 3

Make the falafel mixture: Place all the ingredients for the falafel burger patties into a food processor.  Pulse in short bursts to blend up mixture. Be patient this may take some time.

Step 4

After about five minutes, the mixture is about halfway there.  Let your processor rest if it is getting too hot. We still have a ways to go!

The mixture is done now.  You can see how the texture is smoother so it forms into patties more easily.

Use a 1/2 cup to measure out the falafel burger mixture to form the patties.

Step 5

Use your hands to flatten out the patties evenly and smooth out the edges.  Repeat with remaining mixture.

Step 6

Cook patties in hot oil until browned, turn over gently using a spatula and fork and cook on the other side.

Step 7

Continue cooking until all the falafel burger patties are cooked.

Serve up falafel burger on pita bread or bun and top with cucumber salad and tahini sauce.

Processing the mixture takes time in the food processor, be patient. Take breaks as needed to let your machine rest.

Top Two Tips For Making

The falafel burger mixture is still a bit fragile.  Use a spatula to transfer to the pan. Let them fully cook on first side and then use  a fork to gently flip them over.
