Cook the mushrooms in a heated pan with olive oil. Add the cooked onions and garlic.

Stir in the white wine and cook for 2-3 minutes to allow it to reduce.

Add the veggie broth, coconut milk, and miso to the pan. Cook until it's bubbly.

Remove a quarter cup of liquid and whisk in cornstarch.

Return the cornstarch slurry to the skillet and cook until the sauce thickens. Season with black pepper and fresh thyme.
