Use a measuring cup to measure out the pecans and coconut. Add both to a food processor and pulse until finely chopped.

Transfer to a medium bowl and add cookies, milk, rum, vanilla extract, cocoa powder, cinnamon and coffee concentrate to the bowl.

Mix up the cookie dough using a wooden spoon or spatula.

Use a teaspoon or small ice cream scoop to divide up dough into bite size pieces.

Roll the dough between the fingers of both hands to form into balls.

Roll the balls of dough in your coatings of choice. Place the dough balls a cookie sheet lined with parchment paper. Repeat with rolling until all the cookie dough are in balls and coated with sprinkles. Place the baking sheet in the refrigerator overnight to set cookies.
