What Ingredients Do You Need For This Tasty Potato and Leek Soup

Cut the white end of the leeks.

Leeks hide lots of sand so wash them well after cutting.

Cook the leeks and garlic in olive oil until tender. Stir frequently so they don't burn.

Place the cooked veggies, potatoes, vegetable stock and 4-6 sprigs of thyme in your slow cooker. Cook for 6 hours on low heat or for 4 hours on high heat.

Blend a portion of the soup for a creamier texture.

Mix the blended soup into the remaining in the pot.
