LET'S GET COOKIN'!!
After blanching peas, mash with a fork.
Add the avocado to the bowl of peas.
Mash the avocado into the peas. Until mostly mashed but still a little chunky.
Add the lemon juice, zest, chives and tarragon.
Add salt, pepper and olive oil to the bowl.
Mix together to combine. Taste and adjust seasoning as needed.
Add pea avocado spread to one slice of bread and hummus on another.
Stack up the sandwich, add sliced tomatoes and top slice of bread.
Cut in half to serve up!
