The soup cooks quickly and easily in the instant pot.

Saute the onions and garlic in olive oil using the saute mode of your instant pot.

Add the corn, zucchini, diced tomatoes, green chilies, vegetable broth, chili powder, cumin and oregano.

Stir it up and cook using high pressure for 4 minutes followed by 5 minutes of natural pressure release.

Cut tortillas into small triangles or strips.

Place on a baking tray and bake in the oven until crispy.

Open the lid and add chopped cilantro.

Serve up with jalapenos and squeezes of fresh lime.
