Slice and salt the eggplant to help it draw out some moisture.

Mix the breadcrumbs, cornmeal, garlic powder, sesame seeds, smoked paprika, salt and black pepper.

Mix the flax egg and setup your breading station.

Dip the eggplant in the flax egg. Turn over to get both sides as well as the edges. Shake off any large clumps of flax egg.

Then dip eggplant slices into the breadcrumb mixture, pressing down slightly so they stick. Get both sides and don’t forget the edges.

Lay them in a single layer on a prepared baking sheet lined with parchment and oiled. Repeat until all the pieces are breaded.

Cook for about 20 minutes flipping over halfway through the cooking time.
