Slice the potatoes using a mandolin or by hand.

Melt the ghee and cook the garlic for a minute. Remove all but two tables and allow it to cool.

Place the sliced potatoes in a large bowl along with the green onions, herbs, salt, and pepper.

 Add the reserved oil and toss to coat the potatoes with the oil, onions, and seasoning.

Arrange the potato slices in a circular pattern in the oil coated skillet slightly overlapping the slices completely covering the bottom of the skillet.

Keep layering the potatoes on top. Pour any remaining liquid and herbs over the potatoes in the skillet. Press down firmly on potatoes in the skillet.

Return the skillet to the stove over high heat. Cook without moving until mixture begins to sizzle and then for 3 to 4 minutes longer. R

Transfer to the preheated oven and bake until the potatoes are tender.
