Measure the milk and add the vinegar. Let it sit while you measure out the rest of the ingredients.

Place both sugars, pumpkin, vanilla extract, milk, and pumpkin in a large mixing bowl and mix well with a whisk.

Add the dry ingredients, all purpose and whole wheat flours, baking powder, cinnamon, and salt, to the wet ingredients and stir to combine.

Fold in the shredded zucchini and walnuts, stirring just until they’re evenly dispersed in the batter.

Pour the batter into a well sprayed 9 inch loaf pan.

Bake at 350° F for 70-75 minutes or until a toothpick stuck in the center comes out clean. Cool in the pan for ten minutes and then transfer to a wire rack to continue cooling.
