Set the Instant Pot on the saute setting and add the olive oil. When the oil is hot, add leeks, fennel, garlic, and carrots. Cook for about five minutes or until leeks have softened.

Add the diced tomatoes with liquid, lentils, mushrooms, miso, and 3 cups veggie broth to the instant pot.

Mix everything up well. Then secure the lid on top and make sure the pressure valve is closed. Set the Instant Pot to cook at high pressure for 10 minutes.

When the time is finished, use natural release for 10 minutes. Then open the pressure valve carefully and use quick release to let all the remaining pressure out. When the pot has fully depressurized, carefully remove the lid.

Add the thyme, marjoram, salt, and pepper to the pot of lentil stew. Turn on the saute setting again and add the kale to the pot.

Cook for an additional 5 to allow the kale to soften and the flavors to meld. Serve up with a sprinkle of fresh parsley.
