Preheat the oven to 400° F and wrap the tortilla in foil. Heat just to warm them up. They don’t need to be super hot.

Mash the beans and add the taco seasoning. Mix well. Assemble the other ingredients.

To assemble the vegan taquitos, layout 4-6 tortillas at a time, depending on your work space. Add one tablespoon of black beans to the top of each tortilla and spread it out to the edges.

Add the corn, onion and cilantro over the top.

Tightly roll each tortilla into a tube-like shape. Place them on a baking sheet lined with parchment paper with the seam side down. Repeat with filling and rolling the tortillas until they are all on the pan. Brush the tops lightly with canola or sunflower oil.

Bake in preheated 400°F oven for 20 minutes. Turn them over halfway through the cooking time and brush the top side with a bit of oil. When ready serve them up warm with salsa and guacamole.
