Start by making the cauliflower rice.  To do this, cut up the cauliflower into large chunks and place it in a food processor in small batches.  Pulse the blade in short bursts until it’s in small pieces similar to rice.

Heat the oil in a large skillet over medium high heat, add the red onion, red bell pepper and jalapeno and cook until it is slightly softened.

Next, add the fresh corn and the cauliflower then cook for 3-5 minutes or until it is heated and slightly tender.

Stir in the lime juice and cilantro. Add salt and pepper to taste.

When the cauliflower rice is ready, heat the beans to  add to the burrito bowl.
