Start by cutting the broccoli into similar-sized pieces and giving it a good rinse.


Place a large pot of water to heat to boiling over medium-high heat.


When the water is at a rolling boil, prepare the ice bath by combining water and ice cubes in a large bowl.


Add salt to the boiling water, followed by the broccoli florets. Add the broccoli to the pot in small batches to keep the water boiling.


Cook for one minute, then remove one piece from the pot and plunge into an ice-water bath. Continue cooking in 30-second increments until the broccoli is the tenderness you prefer.


Remove the cooked broccoli from the ice water bath and lay it out on a linen or paper towel-lined sheet pan to dry.

Store in the refrigerator or freezer!
