Place the flat side face down on the cutting board. Slice through the dragon fruit horizontally, especially if you have a large-sized dragon fruit. Then cut into even slices in both directions to make smaller pieces in the shape of cubes.
I sometimes make tiny dragon fruit balls for garnishes or to add to a fruit bowl. To scoop, simply cut the dragon fruit in half and then use the scoop to make balls.
