Make your peanut sauce! Add the peanut butter, honey, soy sauce, white miso, vinegar, lime juice, ginger, garlic and sesame oil to your blender and  blend until smooth.

Add the sriracha sauce to taste, then add salt and pepper as desired.

Cut the snow peas on a bias (angle). Boil some water and add the snow peas to the hot boiling water to cook for 1 minute. Then immediately transfer them into a bowl of ice water to cool.

Combine quinoa, cabbage, spinach and shredded carrots in a medium bowl.  Mix them up.

Top the bowl of mixed veggies with the remaining ingredients and lentil sprouts followed by a drizzle of the spicy peanut dressing.
