A delicious and hearty potato soup recipe.

INGREDIENTS TO MAKE POTATO LEEK SOUP

Extra virgin olive oil Fresh garlic Leeks Potatoes Vegetable broth Fresh thyme Salt and black pepper

Slice the white ends of the leeks and wash well in water.

Drain well and cook with garlic in extra virgin olive oil.

Add leeks, potatoes and broth with a few sprigs of thyme to the slow cooker to cook.

When potatoes are tender, puree 2/3 of the soup in a blender.

Partially mash the remaining potatoes, leaving them slightly chunky.

Return the blended soup to the pot.

Add salt, black pepper and more chopped fresh thyme to the soup.

Serve up for lunch or meal prep for meals through the week!
