Place the chickpeas in a bowl. Add the blackening seasoning and 1 teaspoon olive oil.

Toss to coat the chickpeas with the spice and olive oil. Transfer to a sheet pan to bake in the oven.

Cook the chickpeas at 400° F for 20 minutes.

While the chickpeas cook, you can make the sauce and cook the pasta. Heat 1 tablespoon of olive oil in the pan. Add the onions, celery and bell pepper and cook until softened.

While the vegetables cook, cook the pasta until al dente and then drain.

Add the soy milk and coconut milk to the pan of veggies followed by the nutritional yeast and cajun seasoning and simmer. Mix together cornstarch with ¼ cup water until smooth. Add to pan and stir together. Let it cook for 3-5 minutes to thicken. Taste and add salt and pepper.

To finish up the vegan cajun pasta recipe, add the cooked pasta to the pan and toss to coat it with the sauce. Serve up the spicy pasta topped with the blackened chickpeas.
