Cook the onions in oil until soft and translucent then add the garlic and cook for 60 seconds more.

Add the can of whole tomatoes to the pot along with all the liquid. Use a wooden spoon to break up the tomatoes into smaller chunks.

Add the brown rice and water to the pot and stir to combine. Cover with a lid, reduce the heat to low and cook the rice for 30-35 minutes or until tender.

While the rice cooks, prep the bell pepper. Cut each one in half and trim out the veins on the inside and remove all the seeds.

When the rice is cooked, add the lentils and the seasonings to the rice and mix it up well.

Add the rice and lentil mixture to the peppers. Top each pepper with 1 tablespoon of cheddar. Cover with foil and cook in the oven for 20 minutes or until heated through.
