Cut the zucchini in half and scoop out the insides.

Place them in a baking dish and brush with olive oil, then sprinkle with salt and pepper. Bake in the oven.

Chop up the zucchini insides and set aside.

Cook the onions, mushrooms, and bell pepper in olive oil until tender.

Add some of the zucchini insides and cook until tender and water released.

Add the meatless crumbles, marinara sauce, Italian seasoning and red chili flakes.

Cook until heated through. Taste and adjust seasoning if needed.

Fill the zucchini boats with the vegetarian meat sauce and top with cheese. Bake for 20 minutes.!
