Cook the onions and garlic.

Mash the chickpeas.

Add the carrot, broccoli and red bell pepper and continue cooking.

Mix together the chickpeas, onion mixture, oatmeal, carrots, parsley, and cumin.

Mix the flax meal and water to make a flax egg.

Weigh out mixture and shape into patties. Then bake in the oven for 15 minutes and cool.

When cool, dip each in the flour mixture and then into the flax egg.

Dip into the panko breadcrumbs and transfer to a baking tray.

Bake for thirty minutes or until browned on both sides.
