1

Use a mandolin to slice the potatoes ⅛ inch slices. If you don’t have one, you can slice by hand using a sharp knife.

2

Just go slow and really concentrate on making evenly sliced potatoes.

3

Place the ghee and olive oil in a cast-iron skillet over medium heat. When melted, add the garlic and cook for one minute just to release the flavor.

4

Turn off the heat and allow it to cool while you prep the potatoes and other ingredients. When cooled, transfer to a bowl and set aside.

5

Place the sliced potatoes in a large bowl. Transfer two tablespoons of the reserved oil to the cast iron skillet and swirl to coat the bottom.

6

Add the green onions, herbs, salt, and pepper to the bowl and toss to coat the potatoes with the oil, onions, and seasoning.

7

Starting in the center, arrange the potato slices in a circular pattern in the skillet. You want to slightly overlap the slices completely covering the bottom of the skillet.

8

Once the bottom is covered, continue layering on top in the same way until all the potato is used. Pour any remaining liquid and herbs in the bowl over the potatoes in the skillet. Press down firmly on potatoes in the skillet.

9

Return the skillet to the stove over high heat. Cook the potatoes without moving them until mixture begins to sizzle and then for 3 to 4 minutes longer. Remove from heat and transfer to the preheated oven.

10

Cook until the potatoes are tender and browned, about 50 minutes. Allow the potatoes to cool in the skillet for about 20 minutes. If desired, serve up in the pan or Invert the galette onto a serving platter. Cut the savory galette cut into wedges to serve.
