Start with the sauce. First, heat the olive oil in a saucepan or skillet with a lid.  When the oil is hot, add the onion and carrot and sauté until softened. Then add the garlic and cook for another 30 seconds.

Next, add the cauliflower florets and vegetable broth to the saucepan. Cover with a lid, reduce the heat, and simmer until the cauliflower is very tender about 10 minutes.

While the cauliflower cooks make the breadcrumb topping.  Heat 1 tablespoon of olive oil in a skillet until hot. The oil is ready when it’s swirling in the pan.

Add the breadcrumbs and cook for 2-3 minutes stirring constantly until lightly brown. Remove from heat and add the Italian seasoning and fresh parsley along with salt and pepper to taste.

To cook the pasta, heat a large pot of lightly salted water to boil.  Add the pasta to the water and cook it for 3 minutes less than what the package indicates for a cooking time. When the time is up, drain the pasta, rinse with cold water and drain it again. Set it aside.

When the cauliflower is tender, transfer the mixture in the saucepan to a blender.

Add the tofu, nutritional yeast, mustard, salt, and aminos. Blend the ingredients until they are smooth. Taste the sauce and add salt and white pepper to taste.

Mix together the pasta and the sauce, give it a final taste and adjust any seasonings.

Transfer it to a 12 inch cast iron skillet or casserole dish. Sprinkle the breadcrumb mixture evenly over the top of the casserole. Cook in a 400 ° F oven for 20 minutes or until the mac and cheese is heated through and bubbly.
