Roast the chilies to release their flavors.

Prep up all the veggies for the soup.

Cook the onions, garlic and celery in a large soup pot until tender.

Blend two cups of corn with the deseeded ancho chilies and two cups of vegetable stock.

Add the blender ingredients to the pot with the remaining vegetable stock, carrots, red potatoes and spices. Cook for about 10 minutes, until potatoes and carrots are close to tender.

Add the coconut milk, remaining corn, salt and pepper to the pot. Cook until the potatoes are cooked. Taste and adjust seasoning. Thin out with water or vegetable broth to desired consistency.
