Heat olive oil in large skillet or pot. When oil is heated, add the onions and garlic. Cook for fifteen minutes or until the onions are soft and translucent.

Add the sugar, salt and pepper to the pot of cooked onions. Cook for 30 minutes or until the onions are a caramel brown color. Keep stirring on occasion to move the onions around so they don’t burn.

When the onions reach a deep caramel brown color you are ready to move on to the next step. Add the beer, broth, miso, thyme and bay leaves to the pot. Stir to mix and also to scrape up the browned bits of onions in the pan. Cook for 20 minutes. Add balsamic vinegar and more salt and pepper if needed.

When soup is almost ready, slice the baguette into half inch slices. Layout on a baking sheet. Combine the olive oil, parsley and garlic and spread onto the tops of the bread. Sprinkle lightly with salt and pepper. Place in 400° F oven to toast until lightly browned and crispy.
