A healthy version of a holiday classic!

Easy to make in advance for groups large and small for your holiday meal. 

WHAT YOU NEED TO MAKE EASY VEGAN GREEN BEAN CASSEROLE

Soak the onions in soy or almond milk before breading them with a crunchy coating.

Mix together the flour, panko and seasoning to bread the onion rings.

Place the onions in small batches into the breading and toss them around to coat.

TOP: Lay the onions out in a somewhat single layer on a baking tray. BOTTOM: Bake in the oven until golden brown.

Let's make the mushroom sauce while the onions cook.

Saute the garilc in a sauce pan for 60 seconds.

Add the flour and stir with a spoon to form a roux.

Add the mushroom broth & coconut milk to the pan and cook over medium heat until smooth.

Add white miso to the pot and stir to dissolve.

Add the mushrooms and thyme to the sauce and cook until mushrooms are tender.

Blanch the green beans!

Layer all the components in a baking pan.

Serve up for Thanksgiving, Christmas or any holiday or special event.
