Chop onions and saute in olive oil until soft and transluscent.

Cut carrots into one-half inch pieces.

Cut two potatoes into thin slices as shown on right and the others into 1 inch cubes.

Layer the slices potatoes in your dutch oven or oven safe pot first.

Top the potato slices with the carrots and the onions.

Last add the potato cubes and mushrooms.

Add the parsley, thyme, bay leaves and vegetable broth to finish off your Irish vegetable stew.

Cover the pot of Irish stew with a lid or foil. Cook in 350° F oven for 45 minutes or until veggies are tender.  Season to taste.
