INGREDIENTS

Cook the onions and carrots until tender. Add the garlic and cook for an additional 30 seconds.

Add the cauliflower and vegetable broth and cook until cauliflower is tender, about 10 minutes.

While the cauliflower cooks, cook the pasta 3 minutes  than package direction. Drain, rinse and set aside.

Toast the breadcrumbs in a hot skillet.

When toasted remove from heat and stir in Italian seasoning, parsley, salt and pepper.

Transfer cooked veggies to a blender. Add the tofu, nutritional yeast, mustard, salt, and aminos.

Puree until creamy and then mix with cooked, drained pasta.

Transfer it to a 12 inch cast iron skillet or casserole dish.

Top with breadcrumbs

And bake in the oven for 20 minutes.
