Cook the onion and carrot in olive oil until softened. Then add the garlic and cook for another 30 seconds.

Add the cauliflower and vegetable broth to the saucepan. Cover and cook on low until cauliflower is tender.

Toast the panko breadcrumbs in olive oil.

Remove from heat and add the Italian seasoning and fresh parsley along with salt and pepper to taste.

Cook and drain the pasta.

Transfer the cauliflower mixture to a blender.

Add the tofu, nutritional yeast, mustard, salt, and aminos. Blend the ingredients until they are smooth. Taste the sauce and add salt and white pepper to taste.

Mix together the pasta and the sauce, give it a final taste and adjust any seasonings.

Transfer it to a 12 inch cast iron skillet or casserole dish. Sprinkle the breadcrumb mixture evenly over the top of the casserole. Cook in a 400 ° F oven for 20 minutes or until the mac and cheese is heated through and bubbly.
