Cook soaked beans with vegetable broth until tender.

Saute onions and garlic until softened, stirring frequently so they don’t burn or get too brown.

Add aji amarillo paste then cook for an additional 2 minutes.

When the beans are fully cooked, they will be tender and some may be split up. Add the onion mixture from the skillet to the pot.

Make the salsa criolla. Combine the onions, chile, cilantro and lime juice in a small bowl and mix together. Add salt and pepper to taste.
