Vegan Sliders with Lentils and Chia

To get started, cook the lentils. When they’re ready, drain and allow them to cool down.

When the lentils are cooled, transfer about ⅔ of the mixture to a blender or food processor and puree.  They don’t need to be perfectly smooth, just mostly blended.

Transfer the pureed lentils back to the bowl with the  intact lentils.

Make your chia egg by placing the chia seeds in 3 tablespoons water.  Mix it up and let it sit for about five minutes.

While the chia egg is sitting, add the garlic powder, onion powder, parsley and cumin to the lentils.  When the chia is ready, add it to the mixture.  Mix everything together well, then taste and add the salt and pepper as desired.

Add the oats to the lentils and give it a final stir until everything is mixed together. Place the bowl in the refrigerator to sit for at least 30 minutes.

Measure out the lentil sliders into 2 ounce patties using a scale or ¼ cup measure.  Flatten and shape into burger patties and place on the patties a parchment paper lined baking sheet close together but not touching.

Cook the vegan sliders at 350° F for 20-25 minutes.  Turn over halfway through the cooking time to crisp up both sides. Serve up on mini buns with your favorite toppings!
