Chop fresh spinach in food processor.

Boil in water for 30 seconds and plunge into ice water.

Cook onion and garlic until soft.

Add the cauliflower,  white wine and broth. Cook until cauliflower is very tender.

Combine cooked cauliflower, nutritional yeast, tofu, miso, salt, pepper & mustard in a blender and blend until smooth.

Combine the artichokes, squeezed spinach and cauliflower sauce together.

Mix in some dairy-free cheese and bake until hot and bubbly!
