Start by crumbling up the tofu in a bowl along with the quinoa.

Add the soy sauce, olive oil, chili powder, garlic powder, onion powder, smoked paprika, nutritional yeast, oregano and cumin.

After mixing the tofu and quinoa with all the spices, spread out into an even layer and place into a 400 degree F oven to cook for 20 minutes.

While the quinoa tofu taco meat cooks, cut the tortillas in half and then into thin strips about ¼ inch.

Spread out the uncooked strips on a baking sheet and cook in the oven for 5-10 minutes until browned and crispy.

Next place all the ingredients for the salad dressing into a blender and blend on high until well mixed. Set aside until ready to serve the salad.

When the quinoa tofu taco meat is cooked, it should be browned and slightly more dry and crispy. Remove from oven and allow to cool slightly.

Gather the remaining ingredients together for the plant based taco salad. Add the dressing to the salad greens and toss well, then top the salad with the remaining ingredients.
