Cook the pasta to al dente following the directions on the package. Drain well.

Cook the chopped mushrooms and spinach in olive oil until tender. Drain off any excess liquid.

Process the cottage cheese in a food processor until creamy.

Combine the cottage cheese, a cup of spaghetti sauce, egg, half the mozzarella and the veggies in a bowl.

Add the pasta to the cheese mixture and toss to coat.

Transfer it to a baking dish and top with the remaining spaghetti sauce.

sprinkle the top with mozzarella and parmesan cheese.

Bake for 30 minutes or until bubbly. Let it sit for 10 minutes before serving.
