Grate the zucchini and let it sit to drain in a colander.

Combine both flours, salt, baking powder and baking soda in a bowl.

Place the milk, sugar, flax, vanilla, cinnamon, and vinegar in a blender. Blend to combine.

Add the liquid ingredients from the blender to the bowl of dry ingredients. Mix to combine.

Squeeze the zucchini and then gently fold it in the pancake batter.

Pour it into a baking pan and bake for 35 minutes. Serve hot or at room temperature.
