Ingredients
1tablespoonolive oilcoconut oil, or other neutral oil
Plug in Instant Pot and set on the saute setting. Allow to heat, then add oil and garlic. Stir and saute for 30 seconds to release the flavor..
Add the lentils, coconut milk, vegetable broth, potatoes, curry powder and cayenne pepper to the Instant Pot.
Place the lid on top and lock into place. Check the pressure valve is closed. Set the pressure cooker for high and cook for 10 minutes.
When cooking time is finished, allow it to naturally release the pressure for 10 minutes. Refer to the safe lid removal instructions before removing the lid.
Stir the lentils and add garam masala, salt and pepper to taste. Serve up with plant-based yogurt and cilantro.
Great served with brown rice or basmati rice.
Stove Top Instructions
Saute the garlic in olive oil on medium high heat for 30-60 seconds. Add the lentils, potatoes, vegetable broth, curry powder, coconut milk and cayenne powder to the pot.
Bring to a boil, then cover with a lid, reduce the heat and cook 20 minutes or until lentils are tender. Check occasionally and give it a stir.
When the lentils are tender add the garam masala, salt and pepper and mix everything together before serving.
Notes
Make sure your spices are fresh. Curry loses its flavor quickly it's a good idea to cook with it more frequently or buy in smaller quantities if possible.Take the time for the extra step of sautéing the garlic. This step releases the aromatics in the garlic which enhances the flavor of it in your dish.Stir the garlic constantly and don't let it burn. Garlic burns easily which destroys the appealing flavor of the garlic and transforms it into something bitter and unsavory.Only use natural pressure release for 10 minutes when the lentils are done cooking. If you let them sit longer under pressure the lentils and potatoes may overcook and turn quite mushy.
