An easy and delicious spin on burritos served up a crispy tortilla bowl instead of wrapped. The perfectly seasoned lentil and quinoa filling is hearty and delightfully tasty! Get this family favorite recipe on the table in about 30 minutes or meal prep in advance for weeknight dinners.
Toppings: shredded lettucepico de gallo, guacamole, sour cream or yogurt, cheese
Instructions
Veggies
Preheat oven to 400 degrees F.
Place sliced veggies in a bowl. Drizzle with 1 tablespoon canola oil and sprinkle with salt and pepper. Mix to coat veggie with oil. Then lay them out on a sheet pan. Place into a hot oven and cook for 15-20 minutes. Turn over halfway through.
Cook lentils and quinoa
Heat oil in medium saucepan over medium high heat. When hot, add the onions and cook for 3 minutes, next add garlic and tomatoes and cook an additional 3 minutes until tomatoes are slightly softened.
Add chipotle chili powder, oregano, cumin, quinoa, and 1 cup water. Bring to a boil, cover with a lid, reduce heat and simmer for 8-10 minutes.
Add lentils and more water if needed. Continue to cook until quinoa is ready, another 8-10 minutes. When water is absorbed, turn off from heat, taste and add salt and pepper as needed.
Tortilla bowls
Use an oven safe bowl or ramekin that fits the tortilla to make your tortilla bowl. Lightly spray oil oil and then gently insert the tortilla shaping it to the shape of the bowl. Place in the oven to bake until crispy, about 10 minutes.
Assemble burrito bowl
Place the lentil quinoa in the tortilla bowl followed by the peppers and onions. Then add your favorite toppings.

Ovens can be widely different in how they cook and these can easily burn if cooked too long.For a less spicy vegetarian burrito bowl, trim the seeds and membrane inside the jalapenos because that’s where most of the heat is found and replace the chipotle chili powder with sweet smoked paprika. For those in the family that want it spicy, serve up spicy salsa, diced jalapenos or pickled jalapenos on the side for them to spice up their own vegetarian burrito bowl at the table.Use any oven safe ramekin round or oval to make your tortilla bowls. It simply needs to be something that fits the tortillas. I used a 10 ounce oval shaped ramekin to make the burrito bowls pictured here. You can also use a jumbo muffin pan which will make a tortilla bowl smaller in diameter but taller.
