An easy one pot bean side dish that's perfect for serving with a wide variety of meals. This vegan baked bean recipe cooks up with a thick tomato sauce with plenty of sweet and smoky flavors.
Heat the oil in a skillet over medium high, add the onion when it’s hot. Cook 5-8 minutes or until soft and mostly translucent.
When the onions are cooked, add the tomato paste, brown sugar, yellow mustard, paprika, garlic powder, black pepper and liquid smoke. Stir well.
Add the beans along with 1 ½ cup of water.
Taste and add salt to taste.
Transfer to a baking dish or oven safe skillet and bake in the oven for 20 minutes covered and then another 10 minutes uncovered. Beans should soften and turn creamy and the sauce should thicken slightly.
