Say hello to a vegan no-bake cookie recipe that you can make in just minutes and doesn’t require any cooking!! This no-bake dark cacao cookie recipe is easy to make and perfect for any time of the year with a simple change of sprinkles or ingredients for rolling!
Toppings: sprinklescocoa powder, powdered sugar, shredded coconut or chopped nuts
Instructions
Place the pecans and coconut in a food processor and pulse until finely chopped.
½ cup pecans, 3 tablespoons shredded coconut
Transfer to a bowl and add cookies, milk, rum, vanilla extract, cocoa powder, cinnamon and coffee concentrate to the bowl. Mix it up using a wooden spoon.
1 cup crushed vanilla cookies, ¼ cup unsweetened cocoa powder, ½ teaspoon cinnamon, ½ cup sweetened condensed coconut milk, 2 tablespoons spiced rum, 1 teaspoon vanilla extract, 1 teaspoon coffee concentrate
Refrigerate the cookie dough overnight or a minimum of 2-3 hours.
Use a teaspoon to divide up dough and form into balls. Roll them in your coatings of choices. Place on a prepared baking sheet tray.
Toppings: sprinkles
Repeat until all cookies are rolled. Place the baking sheet in the refrigerator overnight to set cookies.
Transfer and store in an airtight container in the refrigerator for one week.
Notes
Aim for a Small Size Ball. You want them to be bite size cookies that can be eaten in just a bite or two. Using a small cookie scoop is the easiest way to do this!
Let The Cookies Sit. The flavors really develop when the cookies sit overnight in the refrigerator so when possible make them at least a day ahead..
Use Your Freezer. If time is a factor and you don't have time to let them chill, the cookies in the freezer for an hour and then store in the refrigerator until you're ready to serve.
Sticky Dough? The cookie dough shouldn't be too sticky after mixing but, if it is a bit too sticky to roll, refrigerate for an hour or so until it firms up a bit.
