Cut the ends off each plantain and then slice through the peel without cutting in the flesh of the plantain all the way down the length of the fruit trying to avoid cutting into the flesh.
Prep Green Plantains
Once the ends are cut, remove the peel. The peel may be hard to remove. Use your thumb or a spoon to pry the edge of the peel up in order to remove the peel.
Use a mandolin set on 1/16 inch in order to thinly slice the plantain into very thin slices. Or cut by hand with a sharp knife.
Prep Yellow Plantains
Once the ends are cut, the peel should easily come off similar to a banana. Use a knife to slice into thin slices (about ⅛ inch). If you prefer to try using a mandolin, I found using a slightly thicker setting worked better.
Cook the Plantains
When ready, allow the air fryer to preheat to to 325° F. Then lay the plantains out in a single layer over the bottom of the air fryer basket. Avoid layering or overlapping slices of plantain. Sprinkle with salt and pepper if desired.
Cook the plantains for 6-8 minutes. Remove and shake up the chips in the basket halfway through the cook time.
The chips should be lightly browned and crispy when ready. The sweet, plantains may seem to be a bit soft but they will crisp up more as they cool.
