These vegan apple cider donuts are bursting with apple flavor, hints of cinnamon and light sugary sweetness. Made with simple ingredients you can have fresh vegan baked donuts in about 30 minutes
Preheat oven to 350° F. Spray or oil a doughnut pan.
Combine the flours, baking powder, cinnamon, and salt in a medium bowl. Stir together with a whisk to fully incorporate the different ingredients.
Combine the sugars, vanilla, oat milk, apple cider, apple sauce and apple cider vinegar. Stir with a whisk until combined and the sugar is slightly melted.
Add the dry ingredients to the sugar and cider mixture. Mix just until the ingredients are combined.
Use a pitcher to transfer the batter to the doughnut pan filling up the inserts no more than three-quarters of the way up.
Bake in the Oven
Bake in the preheated oven for 18-22 minutes. They are done when a toothpick inserted in the center comes out clean.
Cook in Air Fryer
Preheat the air fryer to 325° F. When the air fryer is ready, add the tray of donuts and cook them for 12-15 minutes. Check for doneness with a toothpick. It should come out clean.
Cool and Top
Transfer them to wire rack to cool.
Mix together the cinnamon and sugar and place on a plate or shallow dish. Melt the coconut oil or vegan butter.
Use a pastry brush to brush the tops (sides and bottoms if you want) of the doughnuts and then dip into the cinnamon sugar mixture.
Serve up warm. Allow them to finish cooling before storing.
Notes
Use a pitcher or some type of container with a spout to fill the donut pan. The batter is relatively thin and pours easily so I found this method worked better than using a piping bag!
Mix the dry and wet ingredients up separately and then combine so the sugar dissolves a bit and increases the liquid in the batter.
Don't skip the preheat! This step is crucial to making sure the donuts cook properly.
Don't forget to spray the donut pan with cooking spray so they come out easily!
