Loaded vegetarian nachos are a fan favorite for the big game and game day events! Ready from start to finish in less than 20 minutes everyone is sure to love these loaded veggie nachos.
Lay out half of the tortilla chips on a rimmed baking sheet or cast iron skillet overlapping in a single layer. Top the chips with half the black beans, corn, red bell pepers, red onion and sliced jalapeno followed by one cup of cheese. Then repeat the process with the remaining chips and ingredients.
Place the nachos in the oven and bake for 10-15 minutes until the cheese is melted and bubbly.
Top with the chopped cilantro and serve up with sour cream, guacamole and salsa.
Notes
I like to layer the heavier ingredients first when making meatless nachos! Make sure you end with the cheese so it melts on top.
Layered nachos in a skillet will require longer to cook around 15 minutes while when spread out on a baking tray, the 10 minutes will likely be sufficient.
Add ingredients between the layers of chips! That way you get toppings on all the chips, even the ones on the bottom.
Don’t forget to preheat the oven! You can do this while layering your healthy nachos and then once you’ve got them ready the oven will be hot.
If you’re not using a non-stick pan, be sure to spray the pan with a bit of cooking spray or line it with parchment paper for easier cleanup.
