This slow cooker polenta makes a tasty and easy side dish you can make anytime you need a side that won't require tons of attention to make. It cooks up so creamy and delicious with just a few simple ingredients to flavor it and it goes with a wide variety of different meals.
Place the polenta with the broth, water, and salt in a slow cooker and cook on low for 1 ½ hours or on high for 50-60 minutes.
When most of the liquid is absorbed, add the milk and stir until well mixed. It will be fairly creamy and loose.
You can serve immediately or continue cooking to thicken it a bit more. Cook until it reaches the desired consistency you want for your polenta.
Notes
For easier cleanup spray a bit of cooking spray on the slow cooker liner. Give it a stir occasionally but there's no need to worry about frequent or constant stirring.Low heat really works best for cooking polenta in the slow cooker.It's easy to adjust the consistency. Add more liquid at the end of cooking for a looser consistency or cook longer if you want it a bit thicker.
