Guasacaca Sauce

Creamy avocado sauce flavored with cilantro, garlic and parsley. A great dipping sauce for just about anything.

  • One ripe Haas avocados seeded and roughly diced
  • 1/2 small onion quartered
  • 1/2 small green bell pepper stemmed, seeded, and roughly chopped
  • 3 medium cloves garlic
  • 1/2 cup packed roughly chopped fresh cilantro leaves
  • 2 T packed roughly chopped fresh parsley leaves
  • 3 T white vinegar
  • 1/2 tablespoon fresh lime juice
  • 3 T olive oil
  • Salt and freshly ground pepper


  • Place all the ingredients except olive oil in a blender or food processor.  Pulse to chop ingredients.
    Ingredients for the guasacaca sauce are in the food processor.
  • Slowly add the olive oil as the blender or processor is running. 
    Sauce is in blender, slowly add olive oil while machine is blending.
  • Blend until creamy and smooth.


**Recipe makes about 8 1/4 cup servings.
