A delicious homemade jam that you can make in less than 30 minutes in the Instant Pot or on the stove. This jam uses chia to thicken the jam and contains less sugar than most jams. Basil and lemon add a bright herbal flavor to the chia strawberry jam.

Pressurize and Depressurize Instant Pot 30 minutesminutes
Remove the stems of the strawberries and cut the fruit in half.
Place the strawberries, water, basil, syrup, lemon juice and water in the Instant Pot. Set the Instant Pot for 1 minute high pressure cooking. When cooking is done, allow the pressure to release naturally.
After fifteen minutes you can move the pressure release valve to open to allow any remaining pressure out. Be sure to be careful as hot water may be released. Then remove the lid.
Stir up the strawberries with a wooden spoon and break up the strawberries. Stir in the chia seeds and let sit for 10 minutes. They will swell up and absorb the water.
Place into jars or other container and cool slightly at room temperature. Then place into refrigeration without a cover. Once the jam has completely cooled, cover with a lid.
Store in the refrigerator. Best if used within one month.

Tips for Best Results:Make sure you wash your strawberries just before making the jam. Any dirt or grit on the strawberries is terrible to crunch into when eating your instant pot strawberry jam.Strawberry basil jam is a great way to use up strawberries that are a little old or sad looking. You might not want to eat them fresh but really there’s nothing wrong with them. Just trim off the brown spots and add them to the jam.Use fresh basil. For strawberry basil jam, dried basil will not work at all.
