2poundspotatoessuch as white Russet potatoes or Yukon golds
Scrub the outside of the potatoes well with a scrub brush and water. Cut potatoes into ⅜ ” slices and then slice each of those into ⅜ “ wide pieces.
Preheat the oven to 425 degrees F about 10 minutes before you are ready to cook.
Season the Potatoes
Place the cleaned and cut potatoes in a bowl and drizzle with oil. Toss to distribute the oil and then add half the seasoning mixture. Use tongs or your hands to toss the potatoes around to distribute the oil and seasoning.
Spray a baking sheet with baking spray and lay out the fries in a single layer and sprinkle the top with the remaining seasoning.
Cook the Oven Baked Fries
Place into the preheated oven and cook 35-40 minutes. Rotate the tray and flip over the potatoes halfway through the cook time. In the last ten minutes of cooking, check the potatoes frequently and move them around as needed so that all the sides get browned.
Potatoes are done when they are tender and golden brown.
Notes
Use all-purpose potatoes such as Russets or Yukon gold potatoes for best results.
Cut fries evenly. When the fries are similar in size they cook more evenly.
Be sure your potatoes are very dry. I suggest patting them dry with paper towels after cutting to make sure there’s no excess water.
Don’t overcrowd the tray. Give the potatoes space in between and make sure they are in a single layer so you end up with perfectly crispy fries.
Move them around during cooking. This allows them to brown up on all sides so you end up with the best crispy french fries.
Leave the peel on. The skin of the potato contains nutrients and it eliminates one step when making homemade oven baked french fries. But it’s just a matter of preference so if you want to peel them that works too.
Use a flaky salt. It adds a little bit of extra crunch to the fries.
